“Delmonico” is a fancy name for ribeye or the same as the Rib Steak less the bone. You’ll find the word Delmonico more commonly in the Northeast (as the original Delmonico’s Restaurant was in NYC); ribeye is the label of choice in the Southeast.

Sizes:

• XXS- is at least .75 lb.

• XS- is at least 1 lb.

• S- is at least 1.25 lbs.

• M- is at least 1.50 lbs.

• L- is at least 1.75 lbs.

• XL- is at least 2 lbs.
